Vintage Recipe - Baking-Powder Biscuits

This recipe is from the Metropolitain Cook Book from 1922. It was printed and distributed by the Metropolitan Life Insurance Company. The recipe is in it's original format with suggestions from me in italics. Enjoy!
Baking-Powder Biscuits

2 cups mixed flour

4 teaspoons baking powder

3/4 teaspoon salt

2 tablespoons fat (This can be crisco, butter, or lard. I have made some with bacon fat and they are good as well, but will def. taste a bit like bacon.)

About 3/4 cup Milk (Start with a little and add until you get the right consistency.)

Mix and sift dry ingredients . Rub in fat with the tips of fingers, or chop in with a knife. Add milk gradually to make a soft dough. Use a knife in mixing. Toss on a well-floured board. Pat and roll out to 1-inch thickness. Cut with a biscuit cutter dipped in flour. Place close together on a greased pan. Bake in a hot oven 10 to 15 minutes.

One cup flour with 1 cup rye flour or whole wheat, or 1 1/2cups flour with 1/2 cup cornmeal, or 1 cup flour with 1 cup mashed potatoes may be in usedin place of the two cups flour. One cup rye and 1 cupbuckwheat flour and two extra teaspoons of baking powder may be used in place of the white flour, and a little more milk will be required.
