Leek Soup

So since I've been sick in bed I thought I would give you a homemade leek soup I like when I'm feeling under the weather. It's easy to make and is great cold or hot.  You can find pre-cut leeks at Trader Joes in the freezer section if you're not up to cutting or cleaning your own.You'll also need a food processor or a blender for this.

3 leeks - White and light green parts only (dark green areas are though and stringy but could be used for your roast chicken or something else.)

4 large cloves garlic cut in half

Chicken Stock-enough to cover the leeks (No more or your soup will be watery.)

1 lime

4 tablespoons olive oil

s=Salt

Pepper


Let's Get Cooking!

Put the broth, cleaned leeks and garlic in a sauce pan.

Simmer until the leeks and the garlic are soft enough that a knife will slide right through them.

Let soup cool.

Place in blender/food processor. If the soup is hot when you do this you may end up with soup everywhere. There should be 50% broth and 50% leeks. If you have too much broth you can pour it out  or if you don't have enough you can add a leetle water.

Add the oil, lime juice and blend. Soup will reach a thick consistency.

Pour the soup back in the pan. The oil may seperate out but that's ok.

Heat the soup up again and add salt and pepper to taste. It's great cold for summer or hot in winter. The leeks are a great source of fiber, and is also considered a great vegetable to eat when your feeling ill. It's high in folate so it's great for women who are pregnant as well. I also know that there's a diet out there that recommends leeks as a detoxifier. I dunno if it works it's really yummy.
