Quick and Easy Lentil Salad Recipe

Hello again! Thought I would give you a recipe for the week. I'm a relatively lazy chef, despite the culinary background, and I love quick meals or sides that taste and look great but don't take me any time. During summer parties this recipe is easy, and makes a great potluck item. I used a heavy chop in my food chopper but if you want a fancier cut you can do it yourself.
You'll need:
1 package pre-cooked lentils - They are now at Ralphs and various other stores. We get ours from Trader Joes.
2 Tomatoes - chopped 
1 yellow bell pepper - chopped
1 red onion - chopped
1 bunch cilantro - chopped
1 handful garlic chives - chopped
Crumbled Feta
2 lemons -ORGANIC for 1/2 teaspoon zest and lemon juice to taste.
1/4 cup Olive Oil
Salt and Pepper to taste

READY, SET, GOOOOO!

Microwave your lentils according to your package and then put them in a bowl and break them up. (Sometimes they stick together.)

Once cool put in your tomatoes, cilantro, onion, bell pepper, and lemon zest. Add the garlic chives to taste and mix a little just to let everything get together.

Now pour in the olive oil SLOWLY while mixing. When everything seems coated stop and put the rest to the side. 

Now add the lemon juice to taste. Everyone is different, make sure you have enough acidity. Remember it shouldn't overwhelm.

 REMEMBER: You can always add more but you can't take away. In this case use a light hand and adjust at the end if necessary.

Add about a 1/2 cup of feta and salt and pepper to taste. (Remember feta is salty.) Toss lightly to keep the feta's shape.

Taste and add more lemon and oil if necessary.
